If you think I’m good at cooking and baking, it must be a delusion. However, once in a blue moon, I did bake something that my friends love to eat and even asking me for recipe. My Carrot Cupcakes are their favourite cupcakes! I typed the recipe in English and in German for my friends and I am very happy to share the recipe with you too. Cup Cake Ingredients:
- 2 eggs
- 165g caster sugar
- 8 g vanilla sugar
- 150ml sunflower oil
- 200g self-raising flour (or 200g flour and filter in 3 teaspoons baking powder)
- 2 medium carrots grated
- ½ lemon zest grated
- A thumb size ginger grated
- 1 teaspoon cinnamon
- 2 tablespoons milk
Method: - Preheat oven to 180 °C
- Place 12 paper cupcake baking cups in a deep bun tray
- Add eggs, sugar, oil into a mixing bowl and beat with an electric whist for 3 minutes until fluffy
- Use spoon, gently fold in flour, carrots, lemon, ginger, cinnamon, milk
- Distribute the dough evenly into the cupcake cups and bake for 20-30 minutes
- Let the cupcakes cool down before applying the frosting
Frosting Ingredients: - 100g butter (soft)
- 100g caster sugar
- 100g cream cheese
Method: - Beat all the ingredients
- Apply frosting to cupcakes with a knife
